Martin & Nicola Corless
They opened the Volare Restaurant business in 1997 after running a pub together in Halifax. Martin, is also the head chef, he spent his earlier career working in Mediterranean restaurants around Yorkshire and on the Med, where he loved to learn about all the different cuisines & produce from fellow chefs & suppliers. Nicola is front of house along with son Leonardo and a small army of local, sixth form college students. Mix all this together & we are Team Volare! We mustn’t forget Charlotte, our chef who has been with us now for 17 years! We also have 3 more sons, Kieran is 30 soon & he lives in Canada with his Canadian wife Miranda & baby son Caleb. There’s teenager Pepe (officially Giuseppe) who pot washes and Enrico Pierre who is currently at middle school. Five of us live above Volare and we absolutely love Skelmanthorpe (or Shat as it’s known round these parts!). We receive a lot of domestic help from Mum Marjorie and we have a large, close knit, family living around us that offer their support unconditionally.
